    Pina Colada Icebox Pie 

        **This is not a quick dish to fix but it is the very first cheesecake I have ever made and I was really proud of how it turned out.

    Pina Colada Icebox Pie

    •  2 cups pecan shortbread cookie crumbs
    (about 16 cookies)

    •  1 cup sweetened flaked coconut

    •  1/4 cup melted butter

    •  1/3 cup sugar

    •  2 Tablespoon cornstarch

    •  1 (8 oz.) can crushed pineapple in juice

    •  1 (8 oz.) package cream cheese

    •  1 cup cream of coconut

    •  2 large eggs

    350 degree oven for 40 to 45 minutes

    Stir together first three ingredients, firmly press on bottom and sides of a lightly sprayed 9-inch pie pan.

    Stir together sugar and cornstarch in small sauce pan, stir in pineapple with the juice.  Bring to a boil stirring constantly until thickened and allow to cool.

    Beat cream cheese and cream of coconut until smooth.  Add in one egg at a time.

    Spread cooled pineapple onto crust and spoon on cream cheese mixture.  After baked allow cheesecake to cool before serving.

    *My friend Doreen made this cheesecake when I was at her home last week.  Doreen had pre-baked the cookie crust and I decided to take a risk and assemble ingredients all at once.  The crust came out baked and tender and totally held the cream cheese together.  Cream of coconut (purchased in a liquor store)  is very sweet.  Doreen had used cream of coconut combined with the whipping cream for a topping.  I chose to top the cheese cake with whipped cream and sprinkled crushed pecans on the whipped cream.  Thanks Doreen for sharing a great dessert.

    Spray Crock Pot with Pam

    •  4 Skinless chicken breasts
    placed in crock pot

    •  Pour 1 Can of beer
    over chicken

    •  Sprinkle with:
    1 Teaspoon pepper
    1 Tablespoon seasoned salt
    1 Teaspoon garlic salt

    4-5 Hours on high setting or
    6/8 Hours on low setting

    Super Easy Apple Dessert 

    •   Spray 9″ x 12″ baking dish

    •  Layer with unpeeled sliced apples

    (the thinner the easier to bake through)

    •  Sprinkle dry, yellow-boxed cake mix

    •  Drizzle one stick of melted butter

    over the dry mix

    •  Preheat oven at 350 degrees

    •  35-45 minutes until top bubbles

    Granny Smith apples or Honey Crisp work

    great.  Delicious apples – not so much.

    Saladette Cold Salad

    Saladette Spam Cold Salad

    •  Large Ring Macarroni – 1/2 of lb. box boiled

    •  1 Can of Spam diced

    •  4-6 center stalks of celery diced

    •  1 Medium onion diced

    •   6 Oz. of frozen peas thawed

    •  Mayonnaise as creamy as you want

    •  Salt and Pepper to taste

    Saladette Cold Salad

    • 4-6 Stalks of Celery diced (center stalks are more

    tender

    • 1 Medium onion diced

    •  8 oz. of frozen green peas (rinsed in hot water to

    thaw)

    • Mayonnaise to suit your taste

    • Salt and Pepper to suit your taste

    Sausage/Cheese Rolls

    Bite Sized Sausage and Cheese Rolls

    •  1 lb. seasoned pork sausage
    •  10 oz. shredded cheese
    •  Three cups of Bisquick

    Mix ingredients and drop by teaspoon onto a baking sheet
    (about the size of a ping pong ball)

    Bake at 375 degrees for 25 – 30 minutes.

    Drizzled with pancake syrup while hot makes for a great breakfast treat!

    This was a recipe I picked up from the Pioneer Woman on the Food Channel.

    Easy Crock Pot Pork Chops

    •  Spray crock pot with cooking spray
    •  Layer pork chops in crock pot
    •  Cover with 1 can of cream of chicken soup
    •  Sprinkle with 1 package of dry Ranch Style Dressing
    •  Cook on “Low” for 6-7 hours

    The gravy is great on instant mashed potatoes.

    The best part of a crock pot is the cooking time can be a bit more and the results are still great.

    Dinty Moore Commercial 

    Here’s a quick meal when there just isn’t any energy to get creative. It serves two.

    •  Hot mashed Potatoes for two
    •  Heat one can of stew
    •  Several slices of bread
    •  Potatoes on the plate

    The stew is spooned over the potatoes and the bread slices are used to soak up the extra gravy.

    Quick Apple Dessert 

    1 can of Apple Pie Mix

    1 box of “One Step” Angel Food Cake Mix

    Combine both for a 9 x13 greased pan

    350 degrees for 25 minutes
